More Info

Guillaume was raised on his family’s vineyard near the Pyrenees in southwest France where he developed an early, hands-on connection to grape growing that later led him to study viticulture and winemaking in Bordeaux. He refined his craft across respected French estates, including eight years at Domaine Bellegarde in Jurançon, where he oversaw both vineyard management and winemaking.

International vintages at Vérité Winery in Sonoma County and Thomas Wines in the Hunter Valley broadened his perspective and sharpened his sensitivity to site, climate, and varietal expression. Guillaume joined Yangarra Estate Vineyard in 2014, progressing to Assistant Winemaker in 2017 and Winemaker in 2022. In 2026, he was appointed Head Winemaker, leading the estate’s continued evolution and its commitment to biodynamic farming.

His winemaking philosophy centres on precision, restraint, and authenticity – matching varieties to site and farming in a way that allows each parcel to express its inherent character.

The Long Room Wine and Food Society holds monthly luncheons in the Long Room on the last Wednesday of each month and has been doing so since its inception in 1987.
