Step inside two of the MCC's finest dining destinations for an interactive cooking masterclass that is sure to elevate your next dinner party.

Hosted across the MCC Committee Room and Members' Dining Room kitchens, this immersive evening will be led by the MCG Chef de Cuisine, Jesse McFadden, and MCG Executive Pastry Chef, Ashley Smith. Read more about our chefs below.

  • Arrival: Enjoy a glass of sparkling and canapés on arrival.
  • Mediterranean cooking experience: In the kitchen of the Members’ Dining Room, Chef Jesse McFadden will take guests on a hands-on Mediterranean journey inspired by the flavours and philosophy of 1956 Restaurant. Learn how to shape your own delicate pastry and flatbreads.
  • Dessert masterclass: In the Committee Room, Pastry Chef Ashley Smith will reveal the secrets behind elegant, stress-free entertaining and introduce guests to a make-ahead dessert. Then, assemble your own individual dessert which can be transformed into a showstopping centerpiece.
  • Canapés in the Committee Room: We will reconvene in the Committee Room to close the evening’s class.

Jesse McFadden's culinary career spans some of the most respected kitchens in Australia and abroad. After being mentored by acclaimed chef Brad Jolly at Alchemy (one hat) in Brisbane, he refined his craft in London, while working at the Michelin-starred Murano by Angela Hartnett.

Returning home to Australia, Jesse established himself in some of Melbourne’s respected dining institutions, including Pure South (one hat) and Circa at The Prince in St Kilda (two hats).

He is currently the Chef de Cuisine at the Melbourne Cricket Club dining venues, including the Jim Stynes Grill, Members’ Dining Room, Long Room and 1956, where he can often be found leading the kitchen on match days.

Jesse’s food philosophy centres on creating dishes that are fun, nostalgic, and full of flavour. He was raised in a close-knit family in Lismore, Northern NSW, and often draws on Mediterranean influences rooted in his upbringing and family traditions.

Ashley Smith is a Yorkshire-born pastry chef with over 15 years of international experience, known for his refined technique and visual storytelling.

His fine dining career began in London, where he trained at Michelin-starred institutions including Gordon Ramsay’s Royal Hospital Road and Claridge’s, developing a deep respect for classical French technique and culinary precision.

After relocating to Australia, Ashley led the pastry programs at Stokehouse in Melbourne and Aria in Sydney, and held positions with the Rockpool Group, Chiswick, The Australian Club, and 12 Micron.

Each dessert Ashley designs tells a story. His innovative, complex creations have been featured in So Good Magazine (Issue 32), with pieces including The Popcorn Box, Sunflower, and Ooops I Dropped the Ice Cream.

Ashley leads the pastry program at the MCG as Pastry Chef de Cuisine and his creative desserts are presented across the stadium.
